In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and ground ginger, sautéing for another minute until fragrant.
Stir in the cubed butternut squash and pour in the broth. Bring to a boil, then reduce to a simmer.
Cover and let simmer for about 20 minutes, or until the squash is tender.
