  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk optional for creaminess
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh herbs for garnish like thyme or parsley

Instructions
 

  • Follow these simple steps to make your delicious butternut squash soup:
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and ground ginger, sautéing for another minute until fragrant.
  • Stir in the cubed butternut squash and pour in the broth. Bring to a boil, then reduce to a simmer.
  • Cover and let simmer for about 20 minutes, or until the squash is tender.
  • Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  • Stir in the coconut milk if using, and season with salt and pepper to taste. Heat through.
  • Serve hot, garnished with fresh herbs.
