  • 6 cups chicken or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Chopped green onions for garnish

  • Prepare the Dumpling Dough: In a mixing bowl, combine the flour, baking powder, and salt. Gradually add the water and vegetable oil, stirring until a soft dough forms. Knead the dough for a few minutes until smooth.
  • Make the Broth: In a large pot, heat a drizzle of oil over medium heat. Add the diced carrots, celery, and onions. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic, thyme, and parsley, and cook for an additional minute.
  • Add the Broth: Pour in the chicken or vegetable broth and bring to a gentle boil.
  • Form the Dumplings: While the broth is heating, divide the dumpling dough into small pieces and roll them into balls about the size of a tablespoon.
  • Cook the Dumplings: Once the broth is boiling, carefully drop the dumpling balls into the pot. Reduce the heat to a simmer and cover the pot. Cook for 15-20 minutes until the dumplings are cooked through and fluffy.
  • Season and Serve: Taste the broth and adjust the seasoning with salt and pepper. Ladle the soup into bowls, garnish with chopped green onions, and enjoy!
