In a medium saucepan, combine the maple syrup, coconut oil (or butter), sea salt, cinnamon, and vanilla extract over low heat until melted and well combined.
In a large mixing bowl, pour the melted mixture over the raw almonds and stir until evenly coated.
Spread the almonds in a single layer on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, stirring halfway through to ensure even roasting.
Once golden brown, remove from the oven and let them cool completely on the baking sheet.
