Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup chocolate chips
  • 1 cup M&M's candies
  • ½ cup peanut butter chips optional
  • Frosting for filling store-bought or homemade

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add in the eggs and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  • Fold in the oats, chocolate chips, M&M's, and peanut butter chips if using.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  • Once cooled, spread frosting on the bottom of one cookie and top it with another to create a sandwich.
