  • 1 cup brown sugar packed

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup white chocolate chips optional

Instructions
 

  • Follow these easy steps to whip up your pumpkin blondies:
  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar, whisking until smooth.
  • Add the pumpkin puree, eggs, and vanilla extract to the mixture, stirring until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • If using, fold in the white chocolate chips.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the blondies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
