Instructions
 

  • Follow these simple steps to make your Pumpkin Oatmeal Bars:
  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  • In a large mixing bowl, combine the pumpkin puree, brown sugar, maple syrup, melted coconut oil, eggs, and vanilla extract. Mix until smooth.
  • Add the rolled oats, almond flour, baking powder, pumpkin pie spice, and salt to the mixture. Stir until well combined. If desired, fold in chocolate chips or nuts.
  • Pour the batter into the greased baking pan and spread it evenly.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
