Ingredients
  

  • 1 cup rolled oats
  • ½ cup almond butter or peanut butter
  • ¼ cup honey or maple syrup
  • ¼ cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice blend
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips optional

Instructions
 

  • In a large mixing bowl, combine the rolled oats, almond butter, honey, pumpkin puree, vanilla extract, pumpkin spice blend, and salt.
  • Mix all the ingredients together until fully combined. If the mixture feels too dry, add a bit more almond butter or pumpkin puree.
  • If using, fold in the mini chocolate chips for an extra touch of sweetness.
  • Once the mixture is well combined, use your hands to roll it into small balls, about 1 inch in diameter.
  • Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  • Store the energy bites in an airtight container in the refrigerator for up to one week.
