In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
In a large mixing bowl, combine flour, salt, pumpkin puree, and pumpkin pie spice.
Pour the yeast mixture into the flour mixture. Stir until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour.
Preheat your oven to 425°F (220°C).
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, then twist it into a pretzel shape.
In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel for about 30 seconds, then remove and place on a parchment-lined baking sheet.
Brush the pretzels with the beaten egg and sprinkle with coarse sea salt.
Bake for 12-15 minutes or until golden brown. Let cool before serving.
