Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 2 cups strong brewed coffee cooled
  • 24 ladyfinger cookies
  • Cocoa powder for dusting
  • Chocolate shavings for garnish optional

Instructions
 

  • Follow these simple steps to make your own Pumpkin Tiramisu:
  • In a large mixing bowl, combine the pumpkin puree, mascarpone cheese, powdered sugar, vanilla extract, and pumpkin spice. Mix until smooth and creamy.
  • In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the pumpkin mixture until well combined.
  • Pour the cooled coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, making sure not to soak them.
  • Layer half of the dipped ladyfingers in the bottom of a 9x9-inch dish.
  • Spread half of the pumpkin mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining pumpkin mixture.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, dust the top with cocoa powder and garnish with chocolate shavings if desired.
