Follow these simple steps to make your own Pumpkin Tiramisu:
In a large mixing bowl, combine the pumpkin puree, mascarpone cheese, powdered sugar, vanilla extract, and pumpkin spice. Mix until smooth and creamy.
In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the pumpkin mixture until well combined.
Pour the cooled coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, making sure not to soak them.
Layer half of the dipped ladyfingers in the bottom of a 9x9-inch dish.
Spread half of the pumpkin mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining pumpkin mixture.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Before serving, dust the top with cocoa powder and garnish with chocolate shavings if desired.
