Begin by washing the apples thoroughly to remove any wax. Pat them dry with a clean towel.
Insert a wooden stick into the top of each apple, pushing it in about halfway.
In a medium saucepan, combine the sugar, corn syrup, and water. Place the saucepan over medium heat and stir until the sugar dissolves.
Once the mixture comes to a boil, stop stirring and allow it to cook until it reaches a temperature of 300°F (hard crack stage). You can use a candy thermometer for accuracy.
If desired, add food coloring to the mixture and stir gently.
Carefully dip each apple into the hot candy mixture, turning to coat completely. Allow excess candy to drip off before placing the apples on a greased baking sheet.
While the candy is still warm, use pieces of black licorice to create spider legs and place candy eyes or chocolate chips on top for the spider's eyes.
Let the apples cool completely before serving.
